The oil of olive: the liquid gold of the Mediterranean diet

The oil of olive is one of the pillars of the Mediterranean diet, recognised all over like one of the healthiest and balanced; a gastronomic an age-old culinary tradition that has modelled our landscapes and has marked the rhythm of the time of the rural surroundings along the centuries.

With all this, meet enough the nicknamed “liquid gold”? Which are his characteristics and values? All the oils are equal? How it elaborates the oil? Or, better, how elaborates a nice oil?
